Peanut Butter Banana Oatmeal Cookies

Ingredients

  • 2 ¼ cups gluten free certified old fashioned oats or rolled quick oats
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup ground flaxseeds
  • ½ cup mashed bananas
  • ¼ cup organic peanut butter
  • 2 tablespoons vegan white chocolate chips
  • 2 tablespoons dried cranberries
  • 2 tablespoons chopped pretzels
  • 2 tablespoons pepitas or other seeds such as sunflower seeds
  • ¼ cup maple syrup

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with a silicone baking mat or parchment paper.
  2. Whisk together the dry ingredients, then add the wet ingredients and mix until combined.
  3. Form the dough into cookies using a little less than 3 tablespoons of dough for each cookie, leaving space between them.
  4. Bake the cookies for 12-15 minutes until the tops are golden brown.
  5. Allow the cookies to cool on the baking mat for 5 minutes before transferring them to a wire rack to cool completely.
