Ingredients

The chicken salad

  • 2 ½ cups cooked diced boneless skinless chicken breasts, chilled
  • 1 cup small grapes, halved
  • ¾ cup diced celery
  • ½ cup Fisher Sliced Almonds
  • cup chopped green onions
  • 3 Tbsp chopped cilantro (optional)

The dressing

  • cup plain fat-free Greek yogurt
  • 3 Tbsp full fat mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 tsp ground coriander
  • ¾ tsp ground cumin
  • ½ tsp ground ginger
  • ¼ tsp turmeric
  • 1 pinch ground cardamom or nutmeg, and cayenne pepper
  • to taste salt and freshly ground black pepper

Instructions

  1. Whisk together all dressing ingredients in a small bowl.
  2. In a large bowl, combine chicken, grapes, celery, almonds, green onions, and cilantro.
  3. Pour the dressing over the chicken salad and toss to coat evenly.
  4. Serve in lettuce, tortillas, croissants, or bread.
