Crockpot Sesame Chicken

Ingredients

  • 1 lb boneless, skinless chicken breast
  • ¼ cup honey
  • ¼ cup soy sauce or tamari
  • ¼ cup organic ketchup
  • 2 teaspoons minced garlic
  • 1 tablespoon sriracha
  • ½ medium onion, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame seeds

Instructions

  1. Mix honey, soy sauce, ketchup, minced garlic, and sriracha together.
  2. Place chicken and onion into a large crockpot and pour the sauce over them.
  3. Cook on high for 1.5-2 hours or on low for 6-8 hours.
  4. Check the chicken at 1.5 hours to ensure it is fully cooked.
  5. Remove the chicken, shred it with two forks, and set aside.
  6. Add cornstarch to the sauce in the crockpot and whisk until dissolved.
  7. Return the shredded chicken to the pot, add sesame seeds, and mix.
  8. Cook for an additional 30 minutes on high.
  9. Serve with white sticky rice, steamed broccoli, and additional sesame seeds.
