Ingredients

The cheese

  • 1 chunk feta cheese

The herbs and spices

  • to taste thyme
  • to taste rosemary
  • 2-3 leaves bay leaves
  • to taste dried red chili peppers or chili flakes
  • to taste freshly-ground black pepper
  • optional citrus zest

The oil

  • enough to cover ml olive oil

Instructions

  1. Start with a clean jar and add chunks of feta cheese.
  2. Add thyme, rosemary, bay leaves, dried chili peppers, and black pepper to the jar.
  3. Pour olive oil into the jar until the cheese is fully submerged.
  4. Let the jar sit at room temperature if consuming within 24 hours, otherwise refrigerate.
  5. Consume within two weeks for best flavor.
