Ingredients

The cheese and oil

  • 4 oz feta cheese block
  • ½ cup good olive oil

The herbs and flavorings

  • 1 unit lemon (using zest only)
  • to taste unit fresh rosemary sprigs
  • to taste unit fresh thyme sprigs
  • to taste unit cracked black peppercorns (optional)
  • to taste unit dried red peppers (optional)
  • to taste unit bay leaves (optional)

Instructions

  1. Wash and dry the herbs, then bruise them gently to release their flavors.
  2. Zest the lemon and cube the feta cheese into 24 pieces.
  3. If marinating overnight, place the ingredients in a zip-bag or covered bowl and leave on the counter, stirring occasionally.
  4. For longer storage, layer the ingredients in a jar and cover completely with olive oil, then refrigerate.
  5. Serve as an appetizer or with grilled meats and vegetables, using leftover oil for dressings or dips.
