Ingredients

  • 1 ⅓ cups semisweet or bittersweet chocolate
  • 3 tablespoons butter
  • 2 large eggs
  • cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ¾ cup almond meal/almond flour

Instructions

  1. Melt the chocolate in a double boiler or microwave, stirring frequently.
  2. Remove from heat and stir in the butter until fully combined.
  3. In a separate bowl, whip the eggs, sugar, salt, and vanilla at high speed until thick and foamy.
  4. Fold the egg mixture into the chocolate-butter mixture, then gently blend in the almond flour.
  5. Chill the batter for at least 1-3 hours until stiff.
  6. Preheat the oven to 325°F (163°C) and prepare a baking sheet.
  7. Drop chilled batter by teaspoonfuls onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-13 minutes until set but still soft in the center.
  9. Cool on the pan for a few minutes before transferring.
