Flourless Chocolate Cookies

Instructions
- Melt the chocolate in a double boiler or microwave, stirring frequently.
- Remove from heat and stir in the butter until fully combined.
- In a separate bowl, whip the eggs, sugar, salt, and vanilla at high speed until thick and foamy.
- Fold the egg mixture into the chocolate-butter mixture, then gently blend in the almond flour.
- Chill the batter for at least 1-3 hours until stiff.
- Preheat the oven to 325°F (163°C) and prepare a baking sheet.
- Drop chilled batter by teaspoonfuls onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10-13 minutes until set but still soft in the center.
- Cool on the pan for a few minutes before transferring.
