Ingredients

The Spice Rub

  • 1 Tablespoon coconut sugar or raw sugar
  • 1 teaspoon ground chili powder or chipotle chili powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • pinch dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

The Pan

  • 2 large parsnips
  • 2 large carrots
  • 2-3 Tablespoons olive oil
  • 1 ½ pounds boneless pork chops
  • to taste salt
  • to taste pepper
  • for garnish lemon slices and fresh herbs

Instructions

  1. Combine the spice rub ingredients in a bowl and set aside.
  2. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  3. Slice the parsnips and carrots, toss them with olive oil and spice rub, then lay them on the baking sheet.
  4. Roast the vegetables in the oven for 15 minutes.
  5. Season the pork chops with the spice rub.
  6. Sear the pork chops in a pan with oil for 2-3 minutes on medium-high heat, flipping halfway through.
  7. Transfer the seared pork chops to the baking sheet with the vegetables.
  8. Bake everything in the oven for an additional 6-8 minutes until the pork reaches an internal temperature of 145-150°F.
  9. Let the pork chops rest for 3-5 minutes before serving.
  10. Garnish with lemon slices and fresh parsley, and season to taste.
