Instructions
- Combine the spice rub ingredients in a bowl and set aside.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Slice the parsnips and carrots, toss them with olive oil and spice rub, then lay them on the baking sheet.
- Roast the vegetables in the oven for 15 minutes.
- Season the pork chops with the spice rub.
- Sear the pork chops in a pan with oil for 2-3 minutes on medium-high heat, flipping halfway through.
- Transfer the seared pork chops to the baking sheet with the vegetables.
- Bake everything in the oven for an additional 6-8 minutes until the pork reaches an internal temperature of 145-150°F.
- Let the pork chops rest for 3-5 minutes before serving.
- Garnish with lemon slices and fresh parsley, and season to taste.
