Crimini Mushroom Turkey Burger

Ingredients

The burger mixture

  • 1 package crimini mushrooms (8-ounce)
  • 2 teaspoons organic expeller-pressed canola oil
  • 1 ¼ pounds lean ground turkey
  • 1 clove garlic
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons reduced-sodium soy sauce
  • to taste freshly ground black pepper

For serving

  • 6 whole whole-grain hamburger buns
  • to taste sliced avocado
  • to taste salsa
  • to taste spring lettuce mix

Instructions

  1. Preheat the grill to medium heat (about 350°F).
  2. Finely chop the mushrooms in a food processor.
  3. Heat oil in a large skillet on medium-high heat and sauté the mushrooms until the water releases and evaporates, about 10 minutes.
  4. Mince the garlic and add it to the mushrooms during the last few minutes of cooking.
  5. Remove from heat and mix in chili powder, cumin, soy sauce, and black pepper.
  6. Let the mixture cool for a few minutes, then stir in the turkey.
  7. Divide the mixture into 6 portions and shape them into patties slightly larger than the buns.
  8. Grill the patties on an oiled grill until cooked halfway through, about 4 minutes, then turn and cook until done, about 2-3 minutes.
  9. Serve the grilled patties on buns topped with avocado, salsa, and lettuce.
