Caramelized Onions

Ingredients

The onions

  • 2 large yellow onions, peeled

The cooking fat

  • 2 tablespoons unsalted butter

Optional liquid

  • as needed none Kosher salt
  • as needed none Low-sodium chicken broth or water (for pan)

Instructions

  1. Halve the onions through the root end and remove the root.
  2. Thinly slice the onions lengthwise.
  3. Repeat the slicing for the remaining onion halves.
  4. Melt butter in a large saucepan over medium heat.
  5. Add onions in batches, stirring until soft and translucent.
  6. Reduce heat to medium-low and cook, stirring occasionally, until blonde-colored.
  7. Continue cooking until onions are golden brown, stirring regularly.
  8. For extra-dark onions, cook until they almost blacken around the edges.
  9. Let the onions cool, then transfer to an airtight container.
