Red Wine Truffles

The truffles

bittersweet or semisweet chocolate

heavy cream

espresso powder

unsweetened cocoa powder

dry red wine

pure vanilla extract
For rolling

unsweetened cocoa powder

chocolate sprinkles

to taste
crushed dehydrated raspberries or strawberries

dark chocolate melted with coconut oil
Instructions
- Finely chop the chocolate and place it in a bowl.
- Heat the cream until it simmers and pour it over the chocolate.
- Add espresso powder and cocoa powder, then stir until smooth.
- Stir in the red wine and vanilla, then refrigerate for 1 hour.
- Scoop portions of the ganache onto a baking sheet and chill for another 30 minutes.
- Roll each portion into a ball and coat with your choice of coating.
- Refrigerate until ready to serve.
