Vegan Maple Caramel Popcorn

The caramel sauce

real maple syrup

almond butter or nut butter of choice

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Toast the nuts in the oven for 7 to 10 minutes until fragrant.
- Pop the popcorn in a large pan with oil, shaking occasionally until popping slows.
- In a small pot, bring maple syrup to a boil for 2 minutes and 30 seconds.
- Remove from heat and whisk in nut butter, vanilla, salt, and cinnamon.
- Combine the popcorn and nuts, drizzle the caramel sauce over, and mix well.
- Spread the popcorn mixture on the baking sheet and bake for 6 minutes, then rotate and bake for another 2 minutes.
- Sprinkle with extra cinnamon and salt, let cool, and break into pieces before serving.
