Vegan Maple Caramel Popcorn

Ingredients

The popcorn

  • cup popcorn kernels
  • 1 tablespoon coconut oil or extra-virgin olive oil
  • 6 cups popped popcorn

The caramel sauce

  • ¾ cup sliced almonds or other nuts (optional)
  • ½ cup real maple syrup
  • 3 tablespoons almond butter or nut butter of choice
  • 1 ½ teaspoons pure vanilla extract
  • ¼ teaspoon sea salt
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toast the nuts in the oven for 7 to 10 minutes until fragrant.
  3. Pop the popcorn in a large pan with oil, shaking occasionally until popping slows.
  4. In a small pot, bring maple syrup to a boil for 2 minutes and 30 seconds.
  5. Remove from heat and whisk in nut butter, vanilla, salt, and cinnamon.
  6. Combine the popcorn and nuts, drizzle the caramel sauce over, and mix well.
  7. Spread the popcorn mixture on the baking sheet and bake for 6 minutes, then rotate and bake for another 2 minutes.
  8. Sprinkle with extra cinnamon and salt, let cool, and break into pieces before serving.
