Ingredients

The popcorn

  • 10 cups organic, freshly popped popcorn, unsalted

The caramel

  • 2 tablespoons vegan butter
  • ½ teaspoon salt
  • 2 tablespoons almond milk
  • ¼ cup maple syrup
  • ¼ cup coconut sugar or raw cane sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Pour the popcorn into a large metal bowl and set aside.
  3. In a pot over medium-high heat, combine the vegan butter, half of the salt, almond milk, maple syrup, coconut sugar, and vanilla, stirring until combined.
  4. Allow the mixture to come to a boil, then add the remaining salt and baking soda, stirring for 1 minute while reducing the heat.
  5. Remove the caramel from heat and pour it over the popcorn, tossing quickly to coat evenly.
  6. Spread the popcorn onto the prepared baking sheet and bake for 15 minutes.
  7. Remove from the oven and let cool on parchment paper to crisp up.
