Vegan Caramel Popcorn

Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- Pour the popcorn into a large metal bowl and set aside.
- In a pot over medium-high heat, combine the vegan butter, half of the salt, almond milk, maple syrup, coconut sugar, and vanilla, stirring until combined.
- Allow the mixture to come to a boil, then add the remaining salt and baking soda, stirring for 1 minute while reducing the heat.
- Remove the caramel from heat and pour it over the popcorn, tossing quickly to coat evenly.
- Spread the popcorn onto the prepared baking sheet and bake for 15 minutes.
- Remove from the oven and let cool on parchment paper to crisp up.
