Ingredients

Brownie Layer

  • 2 eggs eggs
  • ½ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • ¾ cup almond flour
  • cup cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt

Cookie Layer

  • 1 egg egg
  • ¼ cup coconut sugar
  • ¼ cup cashew butter
  • ¼ cup melted coconut oil
  • 1 tsp vanilla
  • cup almond flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 baking dish with parchment paper or oil.
  2. In a large bowl, beat together the eggs, coconut sugar, melted coconut oil, and vanilla for the brownie layer.
  3. In a separate small bowl, stir together the almond flour, cocoa powder, baking soda, and sea salt.
  4. Add the dry ingredients to the wet ingredients and stir until fully combined, then pour into the bottom of the greased baking dish.
  5. For the cookie layer, whisk together the egg, coconut sugar, cashew butter, melted coconut oil, and vanilla in a bowl.
  6. In another bowl, stir together the almond flour, baking soda, and sea salt for the cookie layer.
  7. Combine the dry ingredients with the wet ingredients and stir until mixed, then fold in the chocolate chips.
  8. Crumble the cookie batter on top of the brownie batter layer, pressing down gently to create an even layer, and top with more chocolate chips if desired.
  9. Bake for 30-32 minutes or until the cookie layer is golden.
