Instructions
- Preheat the oven to 350°F and prepare an 8×8 baking dish with parchment paper or oil.
- In a large bowl, beat together the eggs, coconut sugar, melted coconut oil, and vanilla for the brownie layer.
- In a separate small bowl, stir together the almond flour, cocoa powder, baking soda, and sea salt.
- Add the dry ingredients to the wet ingredients and stir until fully combined, then pour into the bottom of the greased baking dish.
- For the cookie layer, whisk together the egg, coconut sugar, cashew butter, melted coconut oil, and vanilla in a bowl.
- In another bowl, stir together the almond flour, baking soda, and sea salt for the cookie layer.
- Combine the dry ingredients with the wet ingredients and stir until mixed, then fold in the chocolate chips.
- Crumble the cookie batter on top of the brownie batter layer, pressing down gently to create an even layer, and top with more chocolate chips if desired.
- Bake for 30-32 minutes or until the cookie layer is golden.
