Walnut Chocolate Brookies

Ingredients

The batter

  • 2 tablespoons unsalted butter
  • 8 ounces semi-sweet chocolate, chopped
  • 2 large eggs, room temperature
  • ½ cup white granulated sugar
  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • a pinch salt
  • ¼ cup all-purpose flour
  • ¼ teaspoon baking powder
  • ½ cup walnuts, chopped

For garnish

  • Maldon sea salt flakes

Instructions

  1. Preheat the oven to 300°F and line 2 baking sheets with parchment paper.
  2. Melt the chocolate and butter in a bowl over simmering water, stirring until smooth, then let cool slightly.
  3. In a stand mixer, beat the eggs and sugars until light yellow, then add the vanilla and salt.
  4. Slowly mix in the melted chocolate until fully incorporated.
  5. Add the flour and baking powder, mixing until just combined, then fold in the walnuts.
  6. Using an ice cream scoop, drop mounds of dough onto the baking sheets, spacing them 2 inches apart.
  7. Shape any mounds that don't seem to spread into a circle.
  8. Bake for 5-7 minutes until the cookies are crackly and slightly puffed.
  9. Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
  10. Sprinkle with sea salt before serving.
