Ingredients

The Burgers

  • 1 pound lean ground beef
  • ½ pound ground chorizo
  • ½ small red pepper, diced small
  • 1 teaspoon chili powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon pepper
  • 6 slices cheddar cheese
  • 6 pieces burger buns

The Toppings

  • 6 slices cooked bacon, crumbled
  • 1 pound frozen tater tots
  • cups sharp cheddar cheese, shredded
  • 1 recipe guacamole
  • 6 pieces green onions, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 cup salsa (optional)

Chipotle Crema

  • 2 tablespoons greek yogurt
  • ¼ cup canned coconut milk or heavy cream
  • 1 chipotle chile, minced
  • 1 tablespoon lime juice
  • to taste salt and pepper

Instructions

  1. Mix the ingredients for the chipotle crema and refrigerate.
  2. Cook the tater tots until crispy according to package directions.
  3. Preheat a grill or griddle over medium-high heat.
  4. Combine the beef, chorizo, red pepper, chili powder, smoked paprika, and pepper, then form into patties.
  5. Grill the patties for 4-5 minutes per side, adding cheese on top to melt.
  6. Preheat the broiler to high.
  7. Assemble the burgers by spreading chipotle crema on the buns, adding the patties, bacon, tater tots, and shredded cheese.
  8. Broil for a short time until the cheese melts, then top with guacamole, bacon, salsa, green onions, cilantro, and the bun.
