Chipotle Crema

Instructions
- Mix the ingredients for the chipotle crema and refrigerate.
- Cook the tater tots until crispy according to package directions.
- Preheat a grill or griddle over medium-high heat.
- Combine the beef, chorizo, red pepper, chili powder, smoked paprika, and pepper, then form into patties.
- Grill the patties for 4-5 minutes per side, adding cheese on top to melt.
- Preheat the broiler to high.
- Assemble the burgers by spreading chipotle crema on the buns, adding the patties, bacon, tater tots, and shredded cheese.
- Broil for a short time until the cheese melts, then top with guacamole, bacon, salsa, green onions, cilantro, and the bun.
