Jalapeño Cheddar Guacamole Turkey Burgers

Ingredients

The burgers

  • 2 units jalapeños
  • 1 pound ground turkey or chicken
  • ½ cup grated cheddar cheese
  • cup panko bread crumbs
  • 1 unit egg
  • 1 teaspoon smoked paprika
  • to taste kosher salt and pepper
  • 4 slices smoked gouda or cheddar
  • 4 units burger buns, toasted
  • 2 units avocados, lightly mashed
  • juice from 1 unit lime
  • to serve chipotle mayo and fresh cilantro

Crispy onions

  • 2 large white onions, halved and sliced very thin
  • 2 cups buttermilk
  • 2 cups flour
  • to taste kosher salt and pepper
  • for frying oil

Instructions

  1. Preheat the broiler and char the jalapeños on a baking sheet.
  2. Cool, seed, and chop the jalapeños, then mix with turkey, cheddar, panko, egg, paprika, salt, and pepper to form patties.
  3. Grill the patties for 5 minutes on each side, adding cheese during the last minute.
  4. Assemble the burgers with chipotle mayo, the patty, avocado, lime juice, crispy onions, and cilantro.
  5. For crispy onions, soak sliced onions in buttermilk, coat in flour, and fry until golden brown.
