Ingredients

  • 2 cups gluten-free flour blend
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon fine salt
  • 6 tablespoons cold unsalted butter
  • 1 tablespoon unsalted butter, melted
  • 1 cup shredded cheddar cheese
  • 3 tablespoons chopped fresh parsley or chives
  • 1 cup dairy or unsweetened non-dairy milk
  • 1 large egg
  • to taste flakey sea salt

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, baking powder, garlic powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in ¾ cup of shredded cheese and the herbs.
  5. Add the milk and beaten egg, stirring until a soft dough forms.
  6. Drop the dough into 12 mounds on the prepared baking sheet and flatten slightly.
  7. Brush the tops with melted butter.
  8. Bake for 9 minutes, then sprinkle with remaining cheese and flakey salt.
  9. Return to the oven and bake until golden brown, about 3 to 5 more minutes.
