Sweet Chili Baked Salmon

Ingredients

The salmon

  • 1.5–2 lbs. salmon

The sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ cup honey
  • ¼ cup water
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 1 teaspoon red pepper flakes
  • ½ tablespoon arrowroot
  • to taste green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Heat a small saucepan over medium-high heat and add olive oil and garlic, sautéing until fragrant.
  3. Add honey, water, cloves, ginger, and red pepper flakes to the pan and bring to a boil.
  4. Reduce to a simmer, add arrowroot, and whisk until dissolved. Simmer for 2 minutes and then remove from heat.
  5. Let the sauce rest for 5 minutes.
  6. Line a baking sheet with parchment paper and place the salmon skin-side down on it.
  7. Reserve about ¼ cup of the sauce and brush the remaining sauce onto the flesh side of the salmon.
  8. Bake the salmon for 15 minutes.
  9. Remove from the oven, pour the reserved sauce on top, and garnish with green onions before serving.
