Stewed Okra and Tomatoes

Ingredients

The base

  • 3 slices bacon
  • ½ cup chopped onions
  • 3 cups frozen or fresh chopped okra
  • 14.5 oz canned diced tomatoes

Seasonings

  • ½ teaspoon Creole Seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. Cook the bacon in a skillet on medium-high heat until crisp, then remove and set aside.
  2. Optionally drain excess fat, leaving at least a teaspoon in the pan.
  3. Add chopped onions to the pan and sauté until translucent and fragrant.
  4. Stir in the okra, diced tomatoes, Creole seasoning, salt, and pepper.
  5. Reduce heat to medium-low, cover, and simmer for 15-20 minutes until the okra is soft.
  6. Add the cooked bacon back into the pan and stir to combine.
