Vegan Thai Iced Tea

Ingredients

The tea

  • 4 cups filtered water
  • 2 Tbsp loose leaf black tea

The sweeteners

  • ¼ cup maple syrup or agave nectar
  • ¼ cup packed light muscovado sugar or coconut sugar
  • 1 tsp pure vanilla extract

The milk

  • 1 14-ounce can light coconut milk

Optional

  • 1-2 Tbsp dark rum per serving (optional)

Instructions

  1. Boil the water in a large saucepan.
  2. Remove from heat and let bubbles subside, then add the tea and stir. Steep for 5 minutes.
  3. Strain the tea into a pitcher or bowl to remove the leaves.
  4. Add maple syrup, muscovado sugar, and vanilla to the tea, whisking to combine and dissolve the sugar.
  5. Chill the tea in the refrigerator for 2-3 hours.
  6. Prepare serving glasses with ice, fill with tea until 3/4 full, and top with coconut milk. Stir gently and enjoy.
