Vegan Thai Iced Tea

maple syrup or agave nectar

packed light muscovado sugar or coconut sugar

light coconut milk

Instructions
- Boil the water in a large saucepan.
- Remove from heat and let bubbles subside, then add the tea and stir. Steep for 5 minutes.
- Strain the tea into a pitcher or bowl to remove the leaves.
- Add maple syrup, muscovado sugar, and vanilla to the tea, whisking to combine and dissolve the sugar.
- Chill the tea in the refrigerator for 2-3 hours.
- Prepare serving glasses with ice, fill with tea until 3/4 full, and top with coconut milk. Stir gently and enjoy.
