Ingredients

The base

  • 1 cup strong brewed coffee
  • 8 cubes coconut milk ice

The flavoring

  • ΒΌ tsp natural peppermint extract
  • 2 Tbsp light chocolate syrup
  • 1 Tbsp cocoa powder

Instructions

  1. Prepare the coffee the night before and chill it in the fridge.
  2. Pour coconut milk into an ice cube tray, cover, and freeze at least 8-10 cubes.
  3. In the morning, blend all ingredients until well combined, adding an extra ice cube if needed.
  4. Taste and adjust flavors as necessary.
  5. Serve immediately or chill/freeze for later. Top with whipped cream, chocolate syrup, and fresh mint if desired.
