Ingredients

  • 1 large ripe banana
  • 2 large eggs
  • 1 cup rolled oats
  • ¼ cup unsweetened protein powder
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • ¼ cup water

Instructions

  1. Preheat your waffle iron.
  2. In a blender, combine banana, eggs, oats, protein powder, olive oil, maple syrup, baking powder, vanilla, salt, and water, and blend until smooth.
  3. Let the batter rest for 5 minutes to thicken.
  4. Grease the waffle iron and pour ⅓ cup of batter into the center.
  5. Close the lid and cook until the waffle is golden brown and releases easily.
  6. Repeat with remaining batter to make about 5 waffles.
  7. Serve warm with desired toppings and store leftovers in the fridge or freezer.
