Banana Chocolate Chip Pancakes

Instructions
- Pulse cashews in a food processor until finely ground.
- Add baking soda, eggs, banana, and vanilla, and pulse until smooth.
- Stir in chocolate chips by hand.
- Heat coconut oil in a 9-inch skillet over medium heat.
- Spoon batter onto the skillet, about 1 tablespoon at a time.
- Flip pancakes when bubbles form on the surface.
- Cook for 1 to 2 minutes on the second side.
- Serve with maple syrup or Cherry Berry Syrup.
