Ingredients

The batter

  • 1 cup cashews
  • ½ teaspoon baking soda
  • 2 large eggs
  • ½ cup mashed banana
  • 1 tablespoon vanilla extract
  • ¼ cup chocolate chips

For cooking

  • as needed tablespoon coconut oil

Instructions

  1. Pulse cashews in a food processor until finely ground.
  2. Add baking soda, eggs, banana, and vanilla, and pulse until smooth.
  3. Stir in chocolate chips by hand.
  4. Heat coconut oil in a 9-inch skillet over medium heat.
  5. Spoon batter onto the skillet, about 1 tablespoon at a time.
  6. Flip pancakes when bubbles form on the surface.
  7. Cook for 1 to 2 minutes on the second side.
  8. Serve with maple syrup or Cherry Berry Syrup.
