Ingredients

The batter

  • 1 cup cashews
  • ½ teaspoon baking soda
  • 2 large eggs
  • ½ cup mashed banana
  • 1 tablespoon vanilla extract
  • ¼ cup chocolate chips

For cooking

  • as needed coconut oil

Instructions

  1. Pulse cashews in a food processor until finely ground.
  2. Add baking soda, eggs, banana, and vanilla to the processor and blend until smooth.
  3. Stir in chocolate chips by hand.
  4. Heat coconut oil in a 9-inch skillet over medium heat.
  5. Spoon batter 1 tablespoon at a time onto the skillet.
  6. Flip pancakes when bubbles form on the surface.
  7. Cook for 1 to 2 minutes on the second side.
  8. Serve with maple syrup or Cherry Berry Syrup.
