Ingredients

The batter

  • ¾ cup oat flour
  • 2 tbsp cacao or cocoa powder
  • 2 tsp coconut oil
  • ¾ cup almond milk
  • 1 ripe banana
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Add-ins

  • ½ cup dairy free chocolate chips

Instructions

  1. Blend all ingredients except for the chocolate chips until just incorporated.
  2. Transfer the mixture to a bowl and fold in the chocolate chips.
  3. Let the batter set for about 3-4 minutes to thicken.
  4. Spray a cooking pan and spoon about two tablespoons of batter to form pancakes.
  5. Cook until bubbles form (about 2 minutes), then flip and cook for another minute.
  6. Transfer pancakes to a plate and repeat until all batter is used.
  7. Add toppings and enjoy!
