Ingredients

The base

  • 1 container (16-ounce) sour cream
  • ¼ cup Old El Paso taco seasoning
  • 2 cans (15-ounce) Old El Paso refried beans
  • 3 cups freshly-made guacamole

The toppings

  • 2 cups shredded Mexican cheese
  • 2 cups cherry or grape tomatoes, halved
  • ½ cup sliced black olives
  • cup diced red onion
  • ¼ cup thinly-sliced green onions
  • ¼ cup fresh roughly-chopped cilantro leaves

Instructions

  1. Whisk together sour cream and taco seasoning in a small bowl and set aside.
  2. Spread refried beans in an even layer in a baking dish.
  3. Layer guacamole on top of the beans, followed by the sour cream mixture.
  4. Add a layer of shredded cheese, then layer tomatoes, olives, red onion, and green onions.
  5. Sprinkle cilantro on top and serve immediately with chips, or refrigerate for up to 6 hours.
