Easy Blueberry Compote

Instructions
- Rinse the blueberries in cold water and pat dry.
- In a medium saucepan, combine one cup of blueberries, granulated sugar, water, lemon juice, lemon zest, and salt.
- Cook the mixture over medium-high heat for 8 to 10 minutes, stirring as needed.
- Reduce heat to medium-low and add the remaining cup of blueberries.
- Continue cooking for an additional 6 to 8 minutes until the desired consistency is reached, stirring frequently.
- Remove the pan from heat and transfer the compote to a jar to cool.
