Instructions
- Combine 2 cups of blueberries and water in a saucepan and heat to a simmer while stirring occasionally.
- Add the sugar and lemon zest, stirring well.
- Cook for 10 minutes, stirring occasionally and mashing the softened berries.
- Stir in the lemon juice.
- Add the remaining cup of blueberries and cook for another 10 minutes, stirring occasionally.
- Let the compote cool and transfer it to a jar for storage.
