Penne Pasta with Sausage and Greens

Ingredients

The pasta

  • 12 oz. penne pasta
  • 1 Tbsp olive oil

The meat

  • 3 links Italian sausage

The vegetables

  • 2 cloves garlic
  • 1 yellow onion onion
  • ¼ lb. frozen broccoli
  • ¼ lb. frozen spinach

The sauce

  • 1 28 oz. can crushed tomatoes
  • 1 6 oz. can tomato paste
  • 1 tsp dried basil
  • ¾ tsp salt
  • ½ Tbsp brown sugar
  • Freshly cracked to taste black pepper

The garnish

  • 2 oz. feta

Instructions

  1. Cook the penne pasta according to package directions, then drain.
  2. In a large pot, heat olive oil and cook the sausage for about five minutes until browned.
  3. Remove the sausage, then sauté diced onion and minced garlic in the same pot for 2-3 minutes.
  4. Slice the sausage and return it to the pot, cooking until fully cooked.
  5. Add crushed tomatoes, tomato paste, basil, salt, pepper, and brown sugar to the pot and stir.
  6. Add the frozen broccoli and spinach, stirring until heated through.
  7. Combine the drained pasta with the sauce and stir in crumbled feta before serving.
