Ingredients

The walnuts

  • 1 pound shelled walnut halves

The coating

  • 1 cup brown sugar
  • 1 teaspoon fine grain sea salt
  • 2 teaspoons favorite curry powder (optional)
  • 1 unit zest of one lemon (optional)
  • 2 large egg whites

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a small bowl, mix the brown sugar, salt, curry powder, and lemon zest.
  3. In a large bowl, whisk the egg whites and then add the walnuts, tossing to coat evenly.
  4. Sprinkle the sugar-spice mixture over the walnuts and toss again until well coated.
  5. Spread the walnuts in a single layer on the prepared baking sheets, separating them as much as possible.
  6. Bake for 25-35 minutes until the walnuts are golden and the coating is hard and dry.
  7. Let the walnuts cool on the baking sheets for about ten minutes before transferring them to a cool surface to cool completely.
  8. Store the cooled walnuts in an airtight container for up to a few weeks or freeze for a few months.
