Candied Walnuts

Instructions
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a small bowl, mix the brown sugar, salt, curry powder, and lemon zest.
- In a large bowl, whisk the egg whites and then add the walnuts, tossing to coat evenly.
- Sprinkle the sugar-spice mixture over the walnuts and toss again until well coated.
- Spread the walnuts in a single layer on the prepared baking sheets, separating them as much as possible.
- Bake for 25-35 minutes until the walnuts are golden and the coating is hard and dry.
- Let the walnuts cool on the baking sheets for about ten minutes before transferring them to a cool surface to cool completely.
- Store the cooled walnuts in an airtight container for up to a few weeks or freeze for a few months.
