Ingredients

The chickpeas

  • 2 15-ounce cans chickpeas

The seasoning

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper

The topping

  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Drain and rinse the chickpeas, then pat them dry.
  3. Place the chickpeas on a baking sheet and drizzle with olive oil, then sprinkle with salt and pepper.
  4. Toss the chickpeas to coat them evenly.
  5. Bake for 25-30 minutes, or longer for extra crispiness.
