Ingredients

The salad

  • 5 ounces mixed spring greens
  • ½ small red onion
  • 2 cups cherry tomatoes
  • 2 cups croutons
  • ½ cup freshly-grated Parmesan cheese
  • cup sliced pepperoncini peppers

The vinaigrette

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly-cracked black pepper
  • 1 small clove garlic

Instructions

  1. Prepare the vinaigrette by whisking all ingredients together in a bowl or shaking them in a mason jar until combined.
  2. Combine all salad ingredients in a large bowl.
  3. Drizzle the vinaigrette over the salad and toss until everything is evenly coated.
  4. Serve immediately, garnished with extra Parmesan if desired.
