Biscoff Cookie Popcorn

Ingredients

The popcorn

  • 8 cups plain popcorn
  • to taste none fine salt

The coating

  • ½ cup honey
  • cup granulated sugar
  • ½ cup natural Biscoff spread
  • ½ teaspoon vanilla extract

The toppings

  • 1 ½ cups chopped Biscoff cookies
  • ½ cup white chocolate chips

Instructions

  1. Place the popped popcorn in a large bowl and add salt to taste.
  2. In a small saucepan, mix honey and sugar, then bring to a boil and simmer for about 2 minutes.
  3. Remove from heat and stir in the Biscoff spread and vanilla extract until melted.
  4. Pour the Biscoff mixture over the popcorn and stir gently to coat.
  5. Spread the popcorn on a baking sheet, add chopped Biscoff cookies, and drizzle with melted white chocolate.
  6. Allow to sit until the chocolate hardens, then enjoy.
