Homemade Whipped Cream

unflavored gelatin

Instructions
- Chill a medium mixing bowl and beaters in the fridge.
- Mix unflavored gelatin and cold water in a microwave-safe bowl and let it sit for 20-30 seconds.
- Microwave the gelatin mixture in 5-second increments until dissolved.
- Remove the chilled bowl and beaters from the fridge, add the heavy cream, and start mixing on low speed.
- Once bubbles form, switch to medium speed and add the sugar and vanilla extract.
- If using gelatin, add it at this point and continue whipping until soft peaks form.
- Do not over mix. Cover the whipped cream and refrigerate for 1-2 hours without gelatin or up to 48 hours with gelatin.
