Ingredients

  • 1 tbsp Avocado oil
  • 4 cloves Garlic (minced)
  • 1 ½ lb Ground beef
  • 1 ½ tsp Sea salt
  • ½ tsp Black pepper
  • 4 cups Cauliflower rice (or cooked white rice)
  • 2 tbsp Italian seasoning
  • ¾ head Cabbage (chopped/shredded; ~6 cups)
  • 3 cups Marinara sauce
  • 3 cups Mozzarella cheese (shredded)

Instructions

  1. 1. Heat oil in a large skillet over medium heat and sauté minced garlic until fragrant.
  2. 2. Increase heat to medium-high, add ground beef, season with salt and pepper, and cook until browned.
  3. 3. Preheat the oven to 350°F (177°C).
  4. 4. In a baking dish, mix cauliflower rice, chopped cabbage, and Italian seasoning.
  5. 5. Stir in the cooked ground beef and marinara sauce until well combined.
  6. 6. Bake for about 30 minutes until the cabbage is crisp-tender.
  7. 7. If using, top with shredded mozzarella and continue baking for an additional 15 minutes until the cheese is golden brown.
