6-Minute Seared Ahi Tuna

Instructions
- 1. Pat the tuna steaks dry and season with red pepper flakes, salt, and pepper.
- 2. Press sesame seeds into the flesh of the tuna.
- 3. Heat oil in a skillet over medium-high heat until very hot.
- 4. Sear the tuna steaks for 90 seconds on each side until the sesame seeds start browning.
- 5. Remove from heat, let rest for 5 minutes, then slice thinly.
- 6. Serve with dark soy sauce and a sprinkling of scallions.
