6-Minute Seared Ahi Tuna

Ingredients

The tuna

  • 10½ ounces ahi tuna steak

The seasoning

  • 1 teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons sesame seeds

The oil

  • 2 teaspoons oil

Instructions

  1. 1. Pat the tuna steaks dry and season with red pepper flakes, salt, and pepper.
  2. 2. Press sesame seeds into the flesh of the tuna.
  3. 3. Heat oil in a skillet over medium-high heat until very hot.
  4. 4. Sear the tuna steaks for 90 seconds on each side until the sesame seeds start browning.
  5. 5. Remove from heat, let rest for 5 minutes, then slice thinly.
  6. 6. Serve with dark soy sauce and a sprinkling of scallions.
