Ingredients

The apples

  • 8–9 pieces cold apples

The caramel

  • 1 and ¾ cups heavy cream
  • 1 cup light corn syrup
  • 2 cups packed light or dark brown sugar
  • ¼ cup unsalted butter
  • ½ teaspoon salt
  • ½ teaspoon pure vanilla extract

Instructions

  1. Rinse and dry the apples, removing any waxy coating.
  2. Insert a stick into each apple.
  3. Prepare a baking sheet with a silicone mat or grease it.
  4. In a saucepan, combine heavy cream, corn syrup, brown sugar, butter, and salt over medium heat.
  5. Stir constantly until the butter melts, then let it cook without stirring until it reaches 235°F (113°C).
  6. Remove from heat, stir in vanilla, and let cool for 10-15 minutes.
  7. Dip each apple into the caramel, allowing excess to drip off.
  8. Place the coated apples on the prepared baking sheet and let them set for about 45-60 minutes.
