Instructions
- Line a baking sheet with parchment paper.
- Insert a lollipop stick into each apple through the stem.
- Prepare a bowl of ice water and set it aside.
- In a medium saucepan, heat the cream and salt until bubbles form.
- Stir in the honey and bring the mixture to a boil.
- Reduce heat and simmer, stirring constantly for about 15-20 minutes until it reaches 255-260°F.
- Carefully place the saucepan in the bowl of cold water to stop cooking.
- Stir until the caramel thickens to a coating consistency.
- Dunk and twirl each apple in the caramel until coated.
- Place the coated apples on the parchment-lined baking sheet to cool and set.
