Ingredients

The apples

  • 6 - 8 small apples, unwaxed, cold

The caramel

  • 1 cup heavy cream
  • ½ teaspoon sea salt
  • 1 cup honey

Special equipment

  • 1 unit candy thermometer
  • 1 unit lollipop sticks

Instructions

  1. Line a baking sheet with parchment paper.
  2. Insert a lollipop stick into each apple through the stem.
  3. Prepare a bowl of ice water and set it aside.
  4. In a medium saucepan, heat the cream and salt until bubbles form.
  5. Stir in the honey and bring the mixture to a boil.
  6. Reduce heat and simmer, stirring constantly for about 15-20 minutes until it reaches 255-260°F.
  7. Carefully place the saucepan in the bowl of cold water to stop cooking.
  8. Stir until the caramel thickens to a coating consistency.
  9. Dunk and twirl each apple in the caramel until coated.
  10. Place the coated apples on the parchment-lined baking sheet to cool and set.
