Ingredients

The tart crust

  • 1 ¼ cups flour
  • 1 tablespoon sugar
  • 12 tablespoons unsalted butter
  • ¼ teaspoon table salt

The filling

  • 5 to 7 pieces apples
  • ¼ cup sugar

The frangipane (optional)

  • ½ cup almond flour
  • 2 tablespoons sugar
  • 1 pinch salt
  • 2 tablespoons butter
  • 1 piece egg
  • 2 teaspoons vanilla or alcohol

For finishing

  • ½ cup apricot jam
  • to taste whipped cream or vanilla ice cream

Instructions

  1. Make the pastry by combining flour, sugar, butter, and salt in a food processor, then pulse until crumbles form.
  2. Add ice-cold water and pulse until the dough is moistened, then form it into a disk and refrigerate.
  3. Roll out the dough into a circle and transfer it to a tart pan, then chill for 1 hour.
  4. In the food processor, combine almond flour, sugar, salt, butter, and egg, then add vanilla or alcohol and purée until smooth.
  5. Preheat the oven to 375°F.
  6. Spread a thin layer of frangipane on the tart shell, then fan out the apple slices on top.
  7. Sprinkle sugar over the apples and dot with remaining butter.
  8. Bake the tart for 60-70 minutes until golden brown.
  9. If using, prepare the apricot glaze and brush it over the tart after it cools.
