Ingredients

The crust

  • cups all-purpose flour
  • 1 pinch salt
  • 7 oz unsalted butter, divided
  • cup ice water
  • tablespoons sugar

The filling

  • 4 large apples, cored and cut into ¼-inch thick slices
  • 2 tablespoons apricot preserves, melted and strained

Instructions

  1. Mix flour, salt, and butter in a stand mixer on low speed for 2 minutes.
  2. Slowly add ice water until the dough forms a ball.
  3. Knead the dough on a floured surface until it comes together and shape into a disk.
  4. Roll the dough into a round about ¼ inch thick and transfer to a baking sheet.
  5. Combine sugar and flour, sprinkle over the dough, and arrange apple slices on top.
  6. Fold the dough over the apples, brush with melted butter, and sprinkle with remaining sugar.
  7. Refrigerate the tart for about 10 minutes.
  8. Preheat the oven to 400°F (207°C) and bake for 1 hour until apples are tender and crust is golden.
  9. Brush the apples with melted preserves and let cool slightly before serving.
