Ingredients

The tart dough

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon sugar
  • ¼ teaspoon table or kosher salt
  • 8 tablespoons cold, cubed butter
  • ¼ cup ice water
  • 1 tablespoon ice water

The apple filling

  • 3 to 4 apples Honey Crisp or other variety
  • ¼ cup butter
  • ¼ cup sugar

For serving

  • 1 cup heavy cream
  • to taste none confectioner’s sugar
  • to taste none flaky sea salt

Instructions

  1. Make the pastry by pulsing flour, sugar, and salt in a food processor, then adding cold butter and pulsing until pea-sized.
  2. Add ice water and pulse until the mixture is crumbly but holds together when pinched.
  3. Roll out the dough into a 12- to 13-inch round and fit it into a tart pan, then freeze for 30 minutes.
  4. Preheat the oven to 425°F and prepare the apples by cutting them into thin slices.
  5. Arrange the apple slices in the tart shell, sprinkle with sugar and dot with cubed butter.
  6. Bake for 35 to 40 minutes, checking for browning and adjusting the temperature if necessary.
  7. Make whipped cream by whipping heavy cream, adding confectioner’s sugar and a pinch of salt.
  8. Serve the tart warm or at room temperature with whipped cream.
