Ingredients

The donuts

  • 1 ½ cups flour
  • ¼ cup ground flax seed
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • ½ cup brown or granulated sugar
  • ¼ cup oil or melted butter
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 1 cup milk
  • 1 cup fresh or frozen blueberries

The glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange zest and juice
  • 1-2 teaspoons ground cardamom

Instructions

  1. Preheat the oven to 400°F and coat a donut pan with cooking spray.
  2. In a medium bowl, whisk together flour, flax, baking powder, cinnamon, and salt.
  3. In another bowl, beat together sugar, oil or melted butter, and egg until fluffy. Then mix in vanilla extract and milk.
  4. Combine the dry ingredients with the wet ingredients until just mixed, then fold in the blueberries.
  5. Spoon or pipe the batter into the donut pan, ensuring the center hole remains open. Bake for 8-12 minutes until a toothpick comes out clean.
  6. Let the donuts cool slightly, then whisk together powdered sugar, orange zest, juice, and cardamom for the glaze. Pour the glaze over each donut.
