Ingredients

The donuts

  • 2 cups oat flour
  • ¼ cup coconut sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • ¼ teaspoon sea salt
  • 1 cup almond milk
  • 1 large egg or flax egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons almond butter

The glaze

  • ½ cup Greek yogurt
  • 3 tablespoons confectioners' sugar

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 12-count donut pan.
  2. In a large bowl, mix the dry ingredients together.
  3. In a separate bowl, whisk the milk, vanilla extract, and egg or flax egg, then pour into the dry mixture.
  4. Add the almond butter and mix until a batter forms.
  5. Transfer the batter to the greased donut pan and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  6. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack.
  7. For the glaze, whisk together the yogurt and confectioners' sugar, then frost the cooled donuts.
