Cauliflower Breadsticks

Ingredients

The base

  • 1 head Cauliflower
  • ½ cup Hemp hearts
  • 2 large Eggs
  • 2 cloves Garlic (minced)
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

Toppings

  • 1 tbsp Unsalted butter (melted)
  • 1 cup Mozzarella cheese (shredded)
  • to taste none Fresh parsley (optional, for garnish)

Instructions

  1. Cook the riced cauliflower in a microwave or steam until softened, then set aside to cool.
  2. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  3. Pulse the hemp seeds in a food processor until smooth, then add eggs, garlic, sea salt, and black pepper, and process until smooth.
  4. Once the cauliflower is cool, squeeze out as much moisture as possible using a tea towel.
  5. Add the drained cauliflower to the food processor and pulse until combined.
  6. Spread the mixture onto the lined baking sheet to form a rectangle about 1/3 inch thick.
  7. Bake for 13-18 minutes until the top is firm and golden.
  8. Brush the top with melted butter, sprinkle with mozzarella cheese, and bake for an additional 5-10 minutes until the cheese is melted.
  9. Cool slightly, then cut into strips.
