Instructions
- Cook the riced cauliflower in a microwave or steam until softened, then set aside to cool.
- Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Pulse the hemp seeds in a food processor until smooth, then add eggs, garlic, sea salt, and black pepper, and process until smooth.
- Once the cauliflower is cool, squeeze out as much moisture as possible using a tea towel.
- Add the drained cauliflower to the food processor and pulse until combined.
- Spread the mixture onto the lined baking sheet to form a rectangle about 1/3 inch thick.
- Bake for 13-18 minutes until the top is firm and golden.
- Brush the top with melted butter, sprinkle with mozzarella cheese, and bake for an additional 5-10 minutes until the cheese is melted.
- Cool slightly, then cut into strips.
