Cajun Grilled Cod

Ingredients

The fish

  • 4 5-oz Cod fillets

The seasoning and flavorings

  • 2 tbsp Unsalted butter (melted)
  • 1 tbsp Lemon juice
  • 4 tsp Cajun seasoning
  • ½ medium Lemon (sliced thinly)

Instructions

  1. Preheat half of the grill burners to medium-high heat.
  2. Place each piece of fish onto a piece of aluminum foil, large enough to wrap around the fish, and pat the fish dry.
  3. In a small bowl, whisk together the melted butter and lemon juice, then brush the mixture over the cod fillets.
  4. Season both sides of the cod with Cajun seasoning and top each piece with a lemon slice.
  5. Fold the foil around the fish, leaving some space inside for air and creating a tight seal.
  6. Grill the cod foil packets over indirect heat for 10-12 minutes, or over direct heat for 7-9 minutes, until the fish is opaque and flakes easily.
