Ingredients

  • 1 medium head romaine or baby romaine lettuce
  • 1 medium head broccoli
  • 1 small avocado
  • cup toasted pistachios
  • to taste crumbled feta
  • big splash balsamic tarragon vinaigrette

Instructions

  1. Bring a large saucepan of water to a boil, add salt, and simmer the broccoli for about a minute until bright and tender.
  2. Drain the broccoli, run it under cold water, pat dry, and set aside.
  3. Trim and slice the romaine into ½-inch strips, wash, and dry thoroughly.
  4. In a large bowl, combine the broccoli, lettuce, and pistachios with the vinaigrette and toss well.
  5. Add the avocado and gently toss again.
  6. Serve topped with feta and additional salt if needed.
