Ingredients

The chicken tenders

  • 12 pieces chicken tenders

The wet ingredients

  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced

The dry ingredients

  • ½ cup gluten-free panko
  • ½ cup gluten-free flour
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Combine mayonnaise, Dijon mustard, and minced garlic in a small bowl and stir until combined.
  2. Add the chicken tenders to the bowl with the wet mixture and toss to coat, then set aside.
  3. In a medium bowl, mix together the gluten-free panko, gluten-free flour, oregano, basil, garlic powder, and smoked paprika.
  4. Dredge each tender in the panko mixture, pressing firmly to ensure they are well coated, then place them on a plate.
  5. Preheat the air fryer to 400°F and spray the basket with cooking spray.
  6. Cook the chicken tenders in batches for 5-6 minutes on each side, until they are cooked through and golden brown.
  7. Garnish with parsley and serve with lemon wedges.
