Tahini Avocado Chickpea Salad

Ingredients

Dressing

  • 1 small avocado
  • 1-2 tsp extra virgin olive oil
  • 1 clove garlic
  • 3 tbsp tahini
  • 2-4 tbsp water
  • 2 tbsp lemon juice
  • ½ tbsp lime juice
  • ¾ tsp cumin
  • ½ tsp coriander
  • ¼-½ tsp kosher salt

Salad

  • 2-3 cups greens
  • 1 cup chickpeas, cooked
  • ¾ cup chopped veggies
  • to taste freshly ground black pepper
  • to taste paprika
  • 3-4 tbsp Tahini Avocado dressing

Instructions

  1. Process the dressing ingredients in a food processor until smooth.
  2. Adjust the dressing to taste, adding more tahini or olive oil if desired.
  3. In a large container, combine the greens, chickpeas, and chopped veggies.
  4. Add the dressing and shake the container to coat the salad evenly.
  5. Transfer the salad to a bowl and serve.
