Ingredients

The blondies

  • 1 ¾ cup all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 ½ cups packed light brown sugar
  • ¾ cup salted butter at room temperature
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 cup diced apples peeled
  • ¼ cup chopped almonds

The strudel

  • 6 tablespoons salted butter chilled and cut into small dice
  • cup all-purpose flour
  • ½ cup sugar
  • ¼ cup chopped almonds
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare an 8x8 inch pan with non-stick spray and parchment paper.
  3. Whisk together the flour, baking powder, cinnamon, cream of tartar, and salt in a bowl.
  4. Beat the brown sugar and butter in a stand mixer, then add eggs and vanilla until combined.
  5. Mix in the dry ingredients, then fold in the diced apples and chopped almonds.
  6. Spread the batter in the prepared pan.
  7. In a food processor, combine strudel ingredients and pulse to mix.
  8. Sprinkle the strudel mixture over the batter.
  9. Bake for 40-45 minutes until golden and a toothpick comes out clean.
  10. Allow to cool completely before cutting.
