Ingredients

The batter

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 cup golden monk fruit sweetener
  • 2 large eggs or vegan substitute
  • ½ cup butter or dairy free butter
  • 1 teaspoon vanilla extract

The mix-ins

  • ½ cup keto chocolate chips
  • ½ cup mix-ins (nuts, seeds, chocolate chunks, etc.)

Instructions

  1. Preheat the oven to 180C/350F and line an 8 x 8-inch pan with parchment paper.
  2. In a large mixing bowl, combine almond flour and baking powder.
  3. In a separate bowl, whisk together golden monk fruit sweetener, eggs, softened butter, and vanilla extract until combined.
  4. Combine the wet and dry mixtures and mix until just combined.
  5. Fold in the chocolate chips and any other mix-ins.
  6. Transfer the batter to the lined pan and bake for 20-25 minutes, or until a skewer comes out just clean.
  7. Let the blondies cool completely in the pan before slicing.
